Lauren’s Blueberry Muffins

Yields1 Serving

 2 cups flour- all purpose or white whole wheat flour
 1 tbsp baking powder
 ½ tsp salt
 1 tsp cinnamon
 ½ cup sugar
  cup vegetable oil
 1 egg
 1 cup milk
 1 cup blueberries (fresh or frozen)

Preheat oven to 400 degrees.

Line muffin pan with 12 liners.

Mix all dry ingredients together in large mixing bowl (Flour-sugar).

In a small bowl- combine oil, egg and milk.

Add liquid ingredients to dry ingredients in a large bowl, and stir until just combined. Try not to overmix.

Fold in blueberries.

Pour mixture evenly into pan.

Bake for about 20-25 minutes or until toothpick placed in center comes out clean.
